Scott Welliver's Washington Apple Cake

2 cup sugar
3 cup flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
1 pinch nutmeg
1 1/2 cup oil
4 eggs
1 teaspoon vanilla
3 cup apples, red; chopped (do not peel)
1 cup walnuts; chopped
1 pint cream, whipping; whipped
1 sugar, powdered; to taste (for sweetening
In large bowl of mixer, sift together dry ingredients. With mixer on slowest speed, add oil. At medium speed, add eggs one at a time, beating well after each addition. Add vanilla. Stir in the apples and walnuts. Turn batter into a greased tub pan. Bake at 350øF for 1 hour or until toothpick comes out clean. Cool 10 minutes in pan and turn out on plate. Serve with sweetened whipped cream.
