Coconut Potato Drops

2 tablespoon instant mashed potato
6 tablespoon water
2 tablespoon milk
1/8 teaspoon salt
1 teaspoon butter
1/2 teaspoon almond extract
1 lb confectioners' sugar, sifted
1 can flaked coconut
DIRECTIONS: Using first 4 ingredients, prepare potato as directed on the package. Add the butter and almond extract. Gradually beat in confectioners' sugar. (Mixture will be thin at first, but thicken later.) Beat until mixture will hold its shape. Add a little more sugar, if necessary. Stir in coconut, and drop by spoonfuls on waxed paper.
