Coconut Macaroons
cookies
2 egg whites
1/8 teaspoon salt
3/4 cup sugar
4 oz coconut
1/8 teaspoon cream of tartar
1 teaspoon vanilla or almond extract
Beat the egg whites, salt, cream of tartar and flavoring until soft peaks form. Add sugar & beat until stiff. Fold in the coconut. Cover a cookie sheet with plain paper. Drop mixture by rounded teaspoon about 1" apart. Bake for 20 to 25 minutes at 300 F. Cool slightly before removing from the pan.
