Salted Peanut Crisps

1 1/2 cup packed brown sugar
1/2 cup margarine or shortening
1/2 cup shortening
2 eggs
2 teaspoon vanilla
3 cup all-purpose flour
2 cup salted peanuts
1/2 teaspoon baking soda
1/4 teaspoon salt

HEAT OVEN TO 375F. GREASE COOKIE SHEET LIGHTLY. MIX BROWN SUGAR, MARGARINE, SHORTENING, EGGS AND VANILLA. STIR IN REMAINING INGREDIENTS. DROP DOUGH BY ROUNDED TEASPOONFULS ABOUT 2-INCHES APART ONTO COOKIE SHEET. FLATTEN WITH GREASED BOTTOM OF GLASS DIPPED INTO SUGAR. BAKE 8 TO 10 MINUTES OR UNTIL GOLDEN BROWN; COOL. MAKES ABOUT 6 DOZEN COOKIES; 85 CALORIES PER COOKIE. NOTE: IF USING SELF-RISING FLOUR, OMIT BAKING SODA AND SALT.
