Lovely Lemon Cheesecake

2 tablespoons graham cracker crumbs; divided
1 package lemon gelatin powder; suga-free
2/3 cup boiling water
1 cup cottage cheese, lowfat
8 ounces neufchatel cheese; softened
2 cups cool whip LiteŽ; thawed
1 cup cherry pie filling; low calorie
Spray an 8 or 9" springform pan or 9" pie plate lightly with nonstick cooking spray. Sprinkle sides with half the graham cracker crumbs. Completely dissolve gelatin in boiling water in small bowl. Pour into blender container. Add cheeses; blend at medium speed, scraping down sides occasionally,about 2 minutes or until mixture is completely smooth. Pour into a bowl. Fold in cool whip. Pour mixture into prepared pans; and smooth top. Sprinkle remaining crumbs along outside edge, leaving center plain. Chill until set, about 4 hours. Just before serving, decorate top of cheesecake with pie filling. Remove sides of pan and cut. (Per serving: 108 calories; 4 g fat).
