Low-fat Rice Pudding

2 each egg whites
1 each egg
2 cup cooked rice
1/2 cup sugar
1/2 cup raisins
2 cup skim milk
1/2 teaspoon vanilla
1/4 teaspoon ground nutmeg
1 ground cinnamon
Heat oven to 325*. Beat egg whites and egg in ungreased 1 1/2 qt casserole . Stir in remaining ingredients. Spinkle with cinnamon to taste. Bake uncov ered 50-60 minutes, stirring after 30 minutes, until knife inserted halfway between center and edge comes out clean. Serve warm or cold. Immediately re frigerate any remaining pudding.
