Mother's Float

1 tablespoon flour
1/2 cup sugar
1 pinch of salt
1 tablespoon butter
1 egg, separated
2 cup milk
1 teaspoon lemon extract
1 tablespoon granulated sugar
1/2 teaspoon vanilla extract

In a small saucepan, combine flour, 1/2 cup sugar, salt, butter, egg yolk and milk. Over medium heat, bring to a boil. Add lemon extract. Set aside to cool slightly. In a small bowl, beat the egg white until stiff. Fold half the egg white into the pudding mixture. To the remaining beaten egg white, add 1 tbsp. sugar and vanilla. Pour pudding into small casserole dish. With a teaspoon, drop lumps of beaten egg white on pudding, and brown in 350f oven for 5 to 10 minutes. Chill and serve. Source: TV Guide, May 11, 1996.
