Rice Bavarian

1 tablespoon gelatin
2 cup hot cooked rice
1 cup sugar
1 teaspoon vanilla
1 1/2 cup milk
1 cup whipping cream
1/4 teaspoon salt
3/4 cup chopped nuts
8 candied cherries, chopped
Soften gelatin in milk. Let stand 10 minutes. Dissolve over hot water. Add hot rice, sugar, and salt. Mix thoroughly. Cool. Add nuts, flavoring, and cherries. Fold in stiffly whipped cream. Pour into molds. If desired, serve topped with whipped cream, candied cherries, and finely chopped nuts. 8 servings.
